Keto Cauliflower Fried Rice (Low-Carb & Easy)
Ingredients (2–3 Servings)

1 medium cauliflower (or 3 cups cauliflower rice)

2 tablespoons butter or sesame oil

2 eggs

3 cloves garlic (minced)

¼ cup chopped onion

¼ cup diced carrots (optional, small amount for keto)

¼ cup green beans or capsicum (optional)

2 tablespoons soy sauce (or coconut aminos for strict keto)

½ teaspoon black pepper

Salt (as needed)

1 teaspoon sesame oil (for flavor)

2 tablespoons chopped spring onions
Step-by-Step Cooking Instructions
Step 1: Prepare Cauliflower Rice

Wash and cut cauliflower into florets.

Add florets to a food processor and pulse until rice-like texture forms.
(If no processor, grate using a box grater.) -
Do not over-process — it should look like rice, not paste.
Step 2: Scramble the Eggs

Heat 1 tablespoon butter/oil in a pan on medium heat.

Crack eggs into the pan.

Scramble until fully cooked.

Remove and set aside.
Step 3: Cook Vegetables

In the same pan, add remaining butter/oil.

Add garlic and onion. Sauté for 30 seconds until fragrant.

Add carrots and other vegetables.

Cook for 2–3 minutes (keep slightly crunchy).
Step 4: Cook Cauliflower Rice

Add cauliflower rice to the pan.

Stir well and cook for 5–7 minutes.

Do not cover the pan (to avoid soggy texture).

Step 5: Add Flavor

Add soy sauce, black pepper, and salt.
