 Ingredients (2–3 Servings)

  • 1 medium cauliflower (or 3 cups cauliflower rice)

  • 2 tablespoons butter or sesame oil

  • 2 eggs

  • 3 cloves garlic (minced)

  • ¼ cup chopped onion

  • ¼ cup diced carrots (optional, small amount for keto)

  • ¼ cup green beans or capsicum (optional)

  • 2 tablespoons soy sauce (or coconut aminos for strict keto)

  • ½ teaspoon black pepper

  • Salt (as needed)

  • 1 teaspoon sesame oil (for flavor)

  • 2 tablespoons chopped spring onions




 Step-by-Step Cooking Instructions

Step 1: Prepare Cauliflower Rice

  1. Wash and cut cauliflower into florets.

  2. Add florets to a food processor and pulse until rice-like texture forms.
    (If no processor, grate using a box grater.)

  3. Do not over-process — it should look like rice, not paste.


Step 2: Scramble the Eggs

  1. Heat 1 tablespoon butter/oil in a pan on medium heat.

  2. Crack eggs into the pan.

  3. Scramble until fully cooked.

  4. Remove and set aside.


Step 3: Cook Vegetables

  1. In the same pan, add remaining butter/oil.

  2. Add garlic and onion. Sauté for 30 seconds until fragrant.

  3. Add carrots and other vegetables.

  4. Cook for 2–3 minutes (keep slightly crunchy).


Step 4: Cook Cauliflower Rice

  1. Add cauliflower rice to the pan.

  2. Stir well and cook for 5–7 minutes.

  3. Do not cover the pan (to avoid soggy texture).

  4. Stir occasionally until moisture evaporates.


Step 5: Add Flavor

  1. Add soy sauce, black pepper, and salt.

  2. Mix well.

  3. Add scrambled eggs back into the pan.

  4. Drizzle sesame oil.

  5. Toss everything together for 1–2 minutes.
